Steps
  1. In a large skillet over medium heat, add the chopped bacon and cook for 6-8 minutes until crispy and golden brown. Transfer to a paper towel-lined plate to drain excess grease.
  2. In a mixing bowl, combine the softened cream cheese, sour cream, maple syrup, bourbon, black pepper, and smoked paprika. Mix until fully incorporated and creamy.
  3. Gently fold in the shredded sharp cheddar cheese, most of the cooked bacon—reserving some for topping—and half the chopped green onions.
  4. Transfer the dip mixture into an oven-safe baking dish, spreading it evenly. Top with the reserved crispy bacon.
  5. Preheat the oven to 350°F (175°C). Bake for 15-20 minutes until hot, bubbly, and slightly golden.
  6. Remove from the oven and allow to cool slightly. Sprinkle the remaining green onions over the top and serve warm with crackers, sliced baguette, or veggie crudités.
