- In a large skillet over medium heat, add the chopped bacon and cook for 6-8 minutes until crispy and golden brown. Transfer to a paper towel-lined plate to drain excess grease.
- In a mixing bowl, combine the softened cream cheese, sour cream, maple syrup, bourbon, black pepper, and smoked paprika. Mix until fully incorporated and creamy.
- Gently fold in the shredded sharp cheddar cheese, most of the cooked bacon—reserving some for topping—and half the chopped green onions.
- Transfer the dip mixture into an oven-safe baking dish, spreading it evenly. Top with the reserved crispy bacon.
- Preheat the oven to 350°F (175°C). Bake for 15-20 minutes until hot, bubbly, and slightly golden.
- Remove from the oven and allow to cool slightly. Sprinkle the remaining green onions over the top and serve warm with crackers, sliced baguette, or veggie crudités.
