Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, beat together unsalted butter and brown sugar until light and fluffy. Add vanilla extract, flour, baking powder, salt, and oats, mixing until crumbly.
  3. Press a little more than half of the crumble mixture into the bottom of the prepared pan. Bake for 12 minutes until set and lightly golden.
  4. Whisk together sweetened condensed milk, lemon juice, and lemon zest in a bowl until thick and smooth. Set aside.
  5. Pour the lemon filling over the baked crust and spread evenly. Sprinkle the remaining crumble mixture on top.
  6. Return to the oven and bake for an additional 22-25 minutes, watching for the edges to turn golden.
  7. Allow to cool completely in the pan before lifting out to slice into squares.
