Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine 1.5 cups of shredded Monterey Jack cheese and 4 ounces of cream cheese in a mixing bowl and microwave until melted, about 30-45 seconds, then stir until smooth.
  3. Add 2 large eggs and 1 cup of almond flour to the cheese mixture, mixing well after each addition until the dough holds together.
  4. Roll the dough out on a floured surface to about ¼ inch thick.
  5. Cook 1 pound of thinly sliced beef with seasonings in a skillet over high heat for about 4-5 minutes.
  6. Place cooked beef in the center of the rolled out dough, leaving space around the edges.
  7. Roll the dough tightly over the filling and seal the edges.
  8. Bake in the preheated oven for 15-20 minutes until golden brown.
  9. Allow the rolls to cool on the baking sheet for about 5 minutes before serving.
