Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine 1.5 cups of shredded Monterey Jack cheese and 4 ounces of cream cheese in a mixing bowl and microwave until melted, about 30-45 seconds, then stir until smooth.
- Add 2 large eggs and 1 cup of almond flour to the cheese mixture, mixing well after each addition until the dough holds together.
- Roll the dough out on a floured surface to about ¼ inch thick.
- Cook 1 pound of thinly sliced beef with seasonings in a skillet over high heat for about 4-5 minutes.
- Place cooked beef in the center of the rolled out dough, leaving space around the edges.
- Roll the dough tightly over the filling and seal the edges.
- Bake in the preheated oven for 15-20 minutes until golden brown.
