  • 1 lb Ground Turkey or Beef/Pork
  • 1 large Egg essential binder
  • 1 cup Shredded Mozzarella Cheese swap with grated fontina if desired
  • 1 tsp Onion Powder or finely chopped fresh onion
  • 1 tsp Garlic Powder or fresh minced garlic
  • 1 tbsp Italian Seasoning or dried basil and oregano
  • 1 tsp Salt kosher or sea salt recommended
For the Casserole
  • 2 cups Low-Carb Tomato Sauce no added sugar
  • 1 cup Shredded Mozzarella Cheese for topping
  • 1/2 cup Grated Parmesan Cheese can use pecorino for more saltiness
Garnish
  • 1 handful Fresh Basil or Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, egg, shredded mozzarella, onion powder, garlic powder, Italian seasoning, and salt. Mix gently until just combined.
  3. Shape the mixture into 1.5-inch meatballs and place them on the prepared baking sheet. Bake for 25 minutes until browned and cooked through.
  4. Transfer the baked meatballs into a greased baking dish. Pour the tomato sauce over them, then top with remaining mozzarella and all of the grated parmesan.
  5. Bake the assembled casserole uncovered for 15-20 minutes until cheese is melted and bubbly. Optionally, broil for 2-3 minutes for a crisped top.
  6. Let the casserole rest for 5 minutes, garnish with fresh basil or parsley, and serve hot.
