Prepare Cheese Sauce
- In a medium saucepan over low heat, melt the butter. Add cream cheese and heavy whipping cream, whisk until smooth. Gradually stir in shredded cheddar cheese until melted and creamy.
Cook Beef
- In a large skillet over medium heat, brown the ground beef for 6-8 minutes. Drain excess fat and stir in taco seasoning and a splash of water, simmer for 3-5 minutes.
Crisp Tortillas
- In a separate skillet, heat olive oil over medium heat. Fry low-carb tortillas for 1-2 minutes per side until golden brown and crispy.
Assemble Crunchwrap
- Layer the crispy tortilla with cooked beef, cheese sauce, smaller tortilla, sour cream, lettuce, tomato, and extra cheddar cheese.
Fold and Cook
- Fold edges of the large tortilla over the filling, creating pleats. Return to skillet seam-side down and cook for 2-3 minutes on each side.
Serve
- Allow to cool for a minute, then cut in half. Garnish with cilantro and jalapeño slices if desired. Serve immediately.
