Ingredients
  

Cheese Sauce
  • 2 tablespoons unsalted butter adds richness
  • 4 ounces cream cheese can substitute with dairy-free cream cheese
  • 0.5 cup heavy whipping cream coconut cream can be used as a low-carb alternative
  • 1 cup shredded cheddar cheese opt for sharp cheddar for a more robust flavor
Filling
  • 1 pound ground beef can substitute with ground turkey or chicken
  • 2 tablespoons taco seasoning use homemade or low-sodium versions
  • 4 pieces low-carb tortillas brands like Mission Carb Balance or almond flour tortillas are recommended
  • 0.5 cup sour cream substitute with Greek yogurt for a lighter version
  • 1 cup shredded lettuce use shredded iceberg or romaine
  • 1 medium tomato can be replaced with bell peppers or omitted for fewer carbs
  • 1 cup extra cheddar cheese consider using pepper jack cheese for extra spice
  • 0.25 cup cilantro substitute with parsley if preferred
  • 4 slices jalapeño slices optional for a spicy kick
  • 2 tablespoons olive oil used for frying tortillas and Crunchwraps

Method
 

Prepare Cheese Sauce
  1. In a medium saucepan over low heat, melt the butter. Add cream cheese and heavy whipping cream, whisk until smooth. Gradually stir in shredded cheddar cheese until melted and creamy.
Cook Beef
  1. In a large skillet over medium heat, brown the ground beef for 6-8 minutes. Drain excess fat and stir in taco seasoning and a splash of water, simmer for 3-5 minutes.
Crisp Tortillas
  1. In a separate skillet, heat olive oil over medium heat. Fry low-carb tortillas for 1-2 minutes per side until golden brown and crispy.
Assemble Crunchwrap
  1. Layer the crispy tortilla with cooked beef, cheese sauce, smaller tortilla, sour cream, lettuce, tomato, and extra cheddar cheese.
Fold and Cook
  1. Fold edges of the large tortilla over the filling, creating pleats. Return to skillet seam-side down and cook for 2-3 minutes on each side.
Serve
  1. Allow to cool for a minute, then cut in half. Garnish with cilantro and jalapeño slices if desired. Serve immediately.
