  • 4 oz turkey or grilled veggies for a vegetarian version
  • 4 oz provolone cheese or mozzarella or cheddar
  • 1 medium tomato sliced
  • 2 tablespoons grated Parmesan cheese omit for dairy-free
For the Bread
  • 4 pieces sub rolls or whole grain or gluten-free rolls

Method
 

Prepare the Grinder Salad
  1. In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper until smooth and creamy.
  2. Fold in the shredded lettuce, sliced red onion, and banana peppers until evenly coated in the dressing.
Assemble the Sandwiches
  1. Slice the sub rolls open and lay them flat.
  2. Layer the meats (salami, pepperoni, turkey) generously among the rolls.
  3. Top with provolone cheese, covering the meat thoroughly.
Broil the Sandwiches
  1. Preheat the oven broiler to high.
  2. Arrange the sandwiches on a baking sheet and broil for 2-3 minutes until cheese melts and edges turn golden.
Final Assembly
  1. Remove the sandwiches from the oven and layer fresh tomato slices on top.
  2. Spoon the grinder salad over the tomatoes, then close the rolls and slice in half.
