  • 1/4 cup Brown Sugar (streusel) White sugar can be substituted.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes.
  3. In a large bowl, beat the softened cream cheese until smooth. Add pumpkin puree, brown sugar, eggs, vanilla, and pumpkin pie spice. Mix until combined. Pour over the baked crust.
  4. For the streusel, combine flour, rolled oats, cold butter, and brown sugar until crumbly. Sprinkle over the cheesecake layer.
  5. Bake for 45 minutes until the center is set. Allow to cool at room temperature, then refrigerate for at least 2 hours before serving.
