Ingredients

  • 1 medium Bell Pepper Use a mix for vibrancy.
  • 1 cup Spinach Frozen spinach can be used.
For the Cheese Mixture
  • 1 cup Cheddar Cheese Can substitute with mozzarella or dairy-free cheese.
  • 3 large Eggs Flaxseed meal mixed with water can be used for vegan.
For Cooking
  • 2 tbsp Olive Oil Can use avocado oil for a different taste.
  • 2 cloves Garlic Fresh or powdered garlic works.
  • 1 medium Onion Fresh or powdered works based on availability.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté garlic and onion for 2-3 minutes until the onions are translucent.
  3. Stir in zucchini and bell peppers. Cook for 5-7 minutes until tender.
  4. Add spinach and cook for an additional 2 minutes. Season with salt and pepper, then stir.
  5. In a bowl, whisk eggs. Add in cheese and combine.
  6. Fold in the sautéed vegetables with the egg and cheese mixture. Transfer to a greased casserole dish.
  7. Bake for 25-30 minutes until golden and set.
  8. Let cool for 10 minutes, then cut into squares and serve warm.
