Ingredients
  

For the Dough
  • 2 cups All-Purpose Flour Use gluten-free flour for gluten-free version.
  • 1 cup Unsalted Butter High-quality butter is recommended.
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar For chewier texture.
  • 2 large Eggs
  • 2 teaspoons Vanilla Bean Paste Pure vanilla extract can be used as a substitute.
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
For the Pastry Cream
  • 2 cups Milk Use whole milk for creaminess.
  • ½ cup Sugar Alternative sweeteners can be used.
  • 4 large Egg Yolks
  • 2 tablespoons Cornstarch Thickening agent.
  • 2 tablespoons Butter
For the Topping
  • ¼ cup Granulated Sugar For caramelizing.

Method
 

Dough Preparation
  1. Cream unsalted butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes. Beat in eggs one at a time, followed by vanilla bean paste.
Combine Dry Ingredients
  1. In a separate bowl, whisk flour, baking powder, and salt, then gradually add to the creamed mixture until a soft dough forms.
Chill Dough
  1. Cover dough with plastic wrap and refrigerate for at least 30 minutes.
Bake Cookies
  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and scoop dough onto it. Bake for 9-12 minutes until edges are golden.
Prepare Pastry Cream
  1. Heat milk in a saucepan. Mix together sugar, egg yolks, and cornstarch in a bowl, then slowly add hot milk. Return to saucepan and cook until thickened.
Fill Cookies
  1. Once cookies are cooled, pipe or spoon pastry cream into the center of each cookie.
Caramelize Sugar
  1. Sprinkle granulated sugar on filled cookies and using a kitchen torch, caramelize until golden brown.
