  • 1 large Eggs or substitute with a flax egg
For the Cinnamon Swirl
  • 1 teaspoon Cinnamon same as in the batter
  • 1 tablespoon Sugar enhances the sweet swirl

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line the loaf pan with parchment paper.
  2. Mash the overripe bananas in a large mixing bowl until smooth.
  3. Blend in the melted butter, then stir in a beaten egg and splash of vanilla extract.
  4. In a separate bowl, whisk together flour, brown sugar, and cinnamon.
  5. Fold the dry mixture into the wet ingredients, careful not to overmix.
  6. Prepare the cinnamon swirl by mixing together cinnamon and sugar.
  7. Pour half of the banana batter into the loaf pan and sprinkle half of the cinnamon mixture over it. Repeat.
  8. Gently swirl through the layers of batter with a butter knife.
  9. Bake for 60-65 minutes until a toothpick comes out clean.
  10. Cool in the pan for about 10 minutes, then transfer to a wire rack.
