Preparation Steps
- In a mixing bowl, combine Biscoff cookie butter, granulated sugar, and mascarpone cheese. Whisk until creamy and well-blended.
- Add cold heavy cream to the mixture and whisk on high speed until stiff peaks form.
- Dip Biscoff cookies briefly into cooled coffee and layer them in a serving dish. Spread half of the mascarpone cream over the cookies.
- Repeat the process with another layer of cookies and top with the remaining mascarpone mixture.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Just before serving, sprinkle crushed Biscoff cookies on top and drizzle warmed cookie butter.
