Cookie Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine softened butter, cookie butter, and white sugar in a mixing bowl. Beat until light and fluffy, about 2-3 minutes.
- Mix in one egg and a splash of vanilla extract until fully incorporated and smooth.
- In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture, stirring gently.
- Blend cream cheese and powdered sugar until smooth and creamy for the filling.
- Scoop out about 1.5 tablespoons of dough, flatten, add filling, and reshape to encase the filling completely.
- Arrange cookie dough balls on baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Optionally, dust with powdered sugar or drizzle with melted white chocolate before serving.

Notes
Consume cookies within three days or freeze unbaked dough for up to three months. Room temperature cream cheese ensures a smooth filling.
