  • ½ cup honey substitute with maple syrup for vegan
  • ¼ cup olive oil or avocado oil
  • 2 tablespoons red wine vinegar apple cider vinegar works too
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano fresh oregano is even better
  • 1 teaspoon red pepper flakes adjust based on spice tolerance
For the Feta Topping
  • 1 cup feta cheese crumbled
  • olive oil optional drizzle
  • fresh parsley chopped, for garnish
For Serving
  • 1 piece lemon sliced

Step-by-Step Instructions
  1. In a mixing bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper until smooth.
  2. Place chicken in a resealable plastic bag or dish, pour marinade over the chicken, coat thoroughly, seal, and refrigerate for at least 30 minutes (2-4 hours preferred).
  3. Mix feta cheese with olive oil, salt, and pepper in a bowl to create the topping.
  4. Preheat your oven to 400°F (200°C).
  5. Remove the chicken from the marinade and place in a baking dish, leaving space between pieces.
  6. Spoon feta mixture evenly over the chicken breasts.
  7. Bake for 25-30 minutes, or until chicken reaches 165°F (75°C); optionally broil for 2-3 minutes for browning.
  8. Let the chicken rest for 5 minutes, then serve garnished with parsley and lemon wedges.
