- Heat approximately 2 inches of vegetable oil in a medium deep skillet over medium-high heat, reaching a temperature of 350°F.
- In a small saucepan, add 1 cup of water and 1 cup of granulated sugar, then stir in 1 cup of walnut halves. Bring to a boil and continue boiling for about 2 minutes, then transfer the walnuts onto a parchment-lined sheet to cool.
- In a mixing bowl, combine ½ cup of mayonnaise, ½ cup of honey, and ¼ cup of condensed milk. Whisk together until smooth, then sprinkle in a pinch of crushed red pepper flakes.
- In a separate bowl, whisk together 2 egg whites and ½ cup of cornstarch until soft peaks form.
- Dip each shrimp into the batter, ensuring they are evenly coated. Fry in hot oil for about 2–3 minutes until golden brown, then transfer to a paper towel-lined plate.
- Gently toss the crispy fried shrimp with the prepared sauce in a large bowl, then serve immediately garnished with candied walnuts.
