Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C), placing a rack in the center.
  2. Peel and chop the potatoes into bite-sized pieces, soak in ice water for 10 minutes, then drain and dry.
  3. Chop the bacon into 1-inch pieces and cook in a skillet over medium heat until slightly crispy, about 5–7 minutes.
  4. Combine the dried potatoes with olive oil, reserved bacon fat, minced garlic, salt, pepper, and onion powder in a mixing bowl.
  5. Spread the potatoes on a parchment-lined baking sheet and roast for 20 minutes, shaking halfway through.
  6. Toss the potatoes, add bacon and honey, then roast for an additional 15–20 minutes until golden brown.
  7. Garnish with parsley and serve hot.
