- Preheat your oven to 400°F (200°C), placing a rack in the center.
- Peel and chop the potatoes into bite-sized pieces, soak in ice water for 10 minutes, then drain and dry.
- Chop the bacon into 1-inch pieces and cook in a skillet over medium heat until slightly crispy, about 5–7 minutes.
- Combine the dried potatoes with olive oil, reserved bacon fat, minced garlic, salt, pepper, and onion powder in a mixing bowl.
- Spread the potatoes on a parchment-lined baking sheet and roast for 20 minutes, shaking halfway through.
- Toss the potatoes, add bacon and honey, then roast for an additional 15–20 minutes until golden brown.
- Garnish with parsley and serve hot.
