Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare an oven-safe skillet or cast-iron pan.
  2. Pat dry the chicken thighs and season both sides with salt and pepper.
  3. Heat olive oil in the skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5 minutes until golden brown.
  4. Flip the chicken and sear the other side for 1 minute.
  5. Reduce heat to medium and add minced garlic, rosemary, and thyme. Sauté for 1 minute until fragrant.
  6. Pour in dry white wine and simmer for 5 minutes, then add heavy cream and simmer for 3 minutes.
  7. Return chicken to the skillet, ensure it is covered by the sauce, and roast uncovered for 20-25 minutes.
  8. Check that the internal temperature reaches 165°F (74°C), then allow to rest before serving with sauce drizzled over.
