Step-by-Step Instructions for Hearty Keto Soup
  1. Heat a large pot over medium heat and add a splash of olive oil. Once shimmering, add the diced chicken thighs. Cook for about 5 minutes, stirring occasionally until browned and cooked through.
  2. Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  3. Stir in the cauliflower florets and chopped celery, mixing thoroughly with the chicken base. Cook for another 3-4 minutes.
  4. Pour in the chicken broth and sprinkle in the dried thyme. Bring to a gentle boil over medium-high heat, then reduce heat to low and let simmer for 15-20 minutes until cauliflower is tender.
  5. Stir in the heavy cream, season with salt and pepper, and let it simmer for an additional 5 minutes.
