For the Vegetables

  • 4 cloves Garlic Fresh garlic is best for optimal flavor.
  • 14.5 ounces Petite Diced Tomatoes Crushed tomatoes can be an alternative if needed.
  • 4 ounces Chopped Green Chiles You can skip this if you’re sensitive to spice.
  • 1 cup Sweet Corn Fresh or frozen corn works great as a substitute.
  • 2 medium Russet Potatoes Cubed potatoes add heartiness.
For the Seasoning
  • 1/4 cup All-Purpose Flour Cornstarch is an excellent substitute for gluten-free diets.
  • 1 teaspoon Salt Consider using reduced sodium salt.
  • 1 teaspoon Black Pepper Freshly cracked pepper is recommended.

For the Beans

Steps
  1. In a large pot or Dutch oven, cook diced bacon over medium heat for about 5-7 minutes, stirring occasionally, until crispy and golden brown. Transfer to a paper towel-lined plate to drain excess fat.
  2. Add kielbasa slices to the same pot and brown for approximately 4-5 minutes, stirring occasionally. Once browned, transfer the kielbasa to the plate with the bacon.
  3. Add the ground beef, diced onion, and minced garlic into the pot. Cook over medium heat for 6-8 minutes, or until the beef is no longer pink and the onion is transparent.
  4. Sprinkle flour, salt, black pepper, and chili powder over the sautéed meat mixture. Stir well for about 1 minute.
  5. Pour in the petite diced tomatoes, baked or ranch beans, chopped green chiles, sweet corn, cubed russet potatoes, and water. Stir everything to combine well.
  6. Increase the heat to high and bring the Cowboy Stew to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 1 hour.
  7. After 1 hour, check the thickness of the Cowboy Stew. If too thick, stir in additional water. Taste and adjust the seasoning if needed. Serve hot, garnished with fresh parsley.
