- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish. Organize your ingredients on the counter.
- In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook for about 7-10 minutes until fully browned.
- Stir in enchilada sauce, diced tomatoes, black beans, ground cumin, and chili powder. Let simmer for about 5 minutes.
- Place 4 corn tortillas at the bottom of the greased baking dish, overlapping slightly.
- Spread half of the beef mixture over the tortillas, followed by half of the cheddar and Monterey Jack cheeses.
- Add another layer of 4 corn tortillas on top of the beef and cheese, then pour the remaining beef mixture on top.
- Finish with the remaining cheese on top.
