  • 1 medium Onion or use onion powder
  • 2 cloves Garlic or substitute with garlic powder
  • 1 cup Enchilada Sauce salsa or seasoned tomato sauce can be alternatives
  • 1 can Diced Tomatoes feel free to use fresh chopped tomatoes
  • 1 can Black Beans pinto or kidney beans are excellent substitutes
  • 2 teaspoons Ground Cumin taco seasoning can replace it
  • 1 tablespoon Chili Powder can be swapped with taco seasoning as well
For the Layers
  • 8 pieces Corn Tortillas flour tortillas can be used but yield a softer texture
  • 1 cup Cheddar Cheese mozzarella or Colby jack can be substituted
  • 1 cup Monterey Jack Cheese feel free to mix up cheese options
  • 0.5 cup Fresh Cilantro optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish. Organize your ingredients on the counter.
  2. In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook for about 7-10 minutes until fully browned.
  3. Stir in enchilada sauce, diced tomatoes, black beans, ground cumin, and chili powder. Let simmer for about 5 minutes.
  4. Place 4 corn tortillas at the bottom of the greased baking dish, overlapping slightly.
  5. Spread half of the beef mixture over the tortillas, followed by half of the cheddar and Monterey Jack cheeses.
  6. Add another layer of 4 corn tortillas on top of the beef and cheese, then pour the remaining beef mixture on top.
  7. Finish with the remaining cheese on top.
  8. Bake in the preheated oven for 25 minutes until the cheese is melted and bubbly.
  9. Let the casserole rest for 5-10 minutes before serving and garnish with freshly chopped cilantro.
