  • 2 cups Zucchini chopped, can use bell peppers or mushrooms
  • 1 tablespoon Olive Oil can substitute with avocado oil
  • 1 can Diced Tomatoes drained, can use fresh tomatoes
  • 1 teaspoon Smoked Paprika use regular paprika for milder flavor
  • 1 teaspoon Chili Powder omit for milder flavor
  • 1 teaspoon Oregano can substitute with Italian seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook for 5-7 minutes until browned.
  2. Stir in chopped zucchini and any additional vegetables. Cook for 3-4 minutes until the zucchini softens slightly.
  3. Sprinkle in the smoked paprika, chili powder, oregano, salt, and pepper. Stir well and cook for 1-2 minutes until aromatic.
  4. Add 1 can of drained diced tomatoes to the skillet. Bring to a simmer, cover, and cook for 10 minutes.
  5. Remove the lid and cook for a few more minutes until the mixture thickens and the zucchini is tender. Stir occasionally before serving.
