Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp Thawed for quick marination and grilling
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Paprika Opt for smoked paprika for more flavor
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly cracked
  • 1/2 teaspoon Cayenne Pepper Optional, for spice
For the Corn Salsa
  • 1 cup Thawed Frozen Corn Fresh corn can be used
  • 1/2 cup Red Onion Diced
  • 1 tablespoon Jalapeño Optional, finely chopped
  • 1/4 cup Cilantro Chopped
  • 1 tablespoon Lime Juice
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise Can use Greek yogurt as a healthier option
  • 1/4 cup Sour Cream
  • 1 clove Garlic Minced for sauce
To Garnish
  • 1 tablespoon Sesame Seeds For visual appeal
  • 2 tablespoons Green Onions Chopped

Method
 

Instructions
  1. In a medium bowl, combine thawed large shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper. Toss well and let marinate for 10-15 minutes.
  2. In a separate bowl, mix thawed corn, diced red onion, finely chopped jalapeño, chopped cilantro, lime juice, and a pinch of salt. Stir until combined.
  3. Preheat grill or grill pan over medium heat for about 5 minutes. Add marinated shrimp, grilling for 2-3 minutes on each side until pink and opaque.
  4. In a small bowl, whisk together mayonnaise, sour cream, cilantro, lime juice, minced garlic, salt, and pepper until smooth. Set aside.
  5. Divide corn salsa among bowls, layer with grilled shrimp, avocado, creamy garlic sauce, and garnish with sesame seeds and green onions.
