Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
For the Quinoa
  • 1 cup quinoa
  • 2 cups chicken broth or water
For the Creamy Avocado Sauce
  • 1 ripe avocado
  • ½ cup Greek yogurt
  • 1 tablespoon lime juice
  • to taste cilantro
For the Bowl Assembly
  • 1 cup cherry tomatoes chopped
  • 1 cup corn fresh, canned, or frozen
  • 1 cup black beans rinsed and drained
  • ½ medium red onion sliced

Method
 

Cooking Instructions
  1. Begin by rinsing quinoa under cold water. Combine with chicken broth or water in a saucepan. Bring to boil, then simmer covered for about 15 minutes until fluffy. Set aside.
  2. Preheat your grill to medium-high heat. Oil grates with olive oil using a paper towel.
  3. Combine olive oil, garlic powder, onion powder, smoked paprika, salt and pepper in a bowl. Rub this mixture on the chicken breasts and let rest.
  4. Grill seasoned chicken for 6-7 minutes per side until internal temperature is 165°F. Let rest for 5 minutes before slicing.
  5. In a blender, combine avocado, Greek yogurt, lime juice, and cilantro. Blend until smooth, season to taste.
  6. In a bowl, mix quinoa with tomatoes, corn, black beans, and red onion. Serve topped with grilled chicken and avocado sauce.
