Avocado Topping
  • 2 pieces ripe avocados mashed
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • 1 pinch salt

Preparation Steps
  1. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, salt, and pepper to create a marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the top.
  3. Allow the chicken to marinate in the refrigerator for at least 15–20 minutes.
  4. Preheat your grill to medium-high heat (about 400°F).
  5. Remove the chicken from the marinade and grill for 6–7 minutes on each side until fully cooked.
  6. While the chicken grills, mash the avocados and mix in lime juice, chopped cilantro, and a pinch of salt.
  7. Once cooked, let the chicken rest for 5 minutes, slice it, and top with the avocado mixture.
  8. Serve garnished with lime wedges and extra cilantro.
