Ingredients

For the Sandwich
  • 4 slices Good Quality White Bread Sourdough or rye is also delightful.
  • 2 oz Goat Cheese crumbled; feta or any soft cheese works too.
  • 2 oz White Cheddar shredded; mozzarella can also be used.
  • 2 tablespoons Liquid Honey divided; maple syrup can be used.
  • 3 tablespoons Butter melted; olive oil can be used for a lighter option.
  • teaspoon Red Pepper Flakes more or less to taste.

Equipment

  • Skillet
  • pastry brush
  • Spatula

Method

Step‑by‑Step Instructions
  1. Melt 3 tablespoons of butter in a small pan over medium-low heat. Add red pepper flakes and simmer for about 5 minutes until fragrant.
  2. Coat one side of each of the four slices of white bread with the spicy melted butter using a pastry brush.
  3. In a skillet, place one slice of bread, butter-side down. Layer with goat cheese, white cheddar, and drizzle with 1 tablespoon of honey. Top with another slice of bread, butter-side facing up.
  4. Cook on medium heat with a lid for 5-7 minutes until golden brown. Check occasionally to prevent burning.
  5. Gently flip the sandwich and cook for an additional 3-5 minutes until fully melted and sides are golden brown.
  6. Remove from skillet, drizzle with the remaining honey, and slice in half to serve hot.
