Method
 

Preparation
  1. Start by scrubbing and peeling the fresh carrots under cold running water. Using a vegetable peeler, shave the carrots into thin ribbons. Set aside in a large mixing bowl.
  2. In a separate bowl, whisk together the soy sauce, rice vinegar, lime juice, maple syrup, minced garlic, ginger powder, and sesame oil until smooth.
  3. Pour the dressing over the carrot ribbons. Toss gently to coat each ribbon in the dressing.
  4. Incorporate the chopped cilantro and red pepper flakes, tossing gently to mix.
