- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat together the softened butter, vegetable oil, and brown sugar until creamy. Add in the egg and vanilla extract, blending well.
- Stir in the cinnamon, baking soda, baking powder, and salt, then fold in the flour until just combined.
- In a separate bowl, mix the additional softened butter, brown sugar, flour, cinnamon, and salt for the streusel until crumbly.
- Portion out the cookie dough onto the prepared baking sheet, indenting each cookie and filling with streusel mixture.
- Bake for 10-12 minutes until golden edges and slightly set centers occur. Allow to cool.
- Whisk together powdered sugar, milk, and vanilla extract, then drizzle over cookies once cooled.
- Serve warm, ideally paired with coffee.
