  • 1 pound baby potatoes can substitute with sweet potatoes or cauliflower

  • 1/2 cup unsalted butter can substitute with olive oil
  • 4 cloves garlic (minced) fresh garlic is ideal
  • 1 teaspoon onion powder can substitute with finely chopped onions
  • 1 teaspoon smoked paprika regular paprika can be used
  • 1 teaspoon dried thyme fresh herbs will enhance flavor
  • 1 teaspoon dried rosemary fresh herbs will enhance flavor
  • to taste salt adjust according to preference
  • to taste black pepper freshly ground pepper will enhance aroma
  • 1 cup beef broth opt for low-sodium broth for a healthier choice

Method
 

Step-by-Step Instructions
  1. Cut the beef stew meat into bite-sized pieces and halve the baby potatoes.
  2. Optional: Parboil halved baby potatoes for 2-3 minutes in boiling water, then drain.
  3. Heat olive oil in a skillet over medium-high heat. Sear the beef pieces for 5-7 minutes.
  4. In a mixing bowl, combine melted unsalted butter, minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper.
  5. Layer halved potatoes in the slow cooker, place seared beef on top, pour garlic butter sauce over, and add beef broth.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
  7. Let the dish rest covered for 10 minutes before serving.
