Step-by-Step Instructions

  4. Whisk egg yolks, blended cottage cheese, optional sweetener, vanilla extract, and cornstarch until smooth.
  5. Gently fold the egg yolk mixture into the whipped egg whites using a spatula.
  6. Carefully fold in the fresh blueberries, making sure to distribute them evenly.
  7. Scoop the batter onto the prepared baking sheet, spacing mounds about 2 inches apart.
  8. Bake for 25-30 minutes until golden brown and firm to the touch.
  9. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
