  • 1 tsp Salt
  • 1 tsp Pepper
For the Veggies
  • 1 cup Fresh Corn Kernels Can use frozen corn.
  • 1 cup Diced Tomatoes Fresh or canned varieties.
  • 1 can Black Beans Rinse before adding.
  • 1 piece Avocado Can swap with diced mango.
  • 0.25 cup Cilantro Substitute with parsley if preferred.
For the Flavor
  • 2 tbsp Lime Juice Can use lemon juice as an alternative.
  • 1 tsp Chili Powder Smoked paprika can be an alternative.
  • 1 tsp Garlic Powder

Method
 

Step-by-Step Instructions
  1. Cook the Rice: In a medium pot, combine one cup of rice with two cups of water and a pinch of salt. Bring it to a boil, then reduce heat, cover, and simmer for 15-20 minutes until fluffy.
  2. Prepare the Chicken: Season chicken breasts with salt and pepper. Heat oil in a skillet, add chicken, and sear for 6 minutes each side until cooked through. Remove and let rest.
  3. Sauté Corn & Spices: In the same skillet, add fresh corn, chili powder, and garlic powder. Sauté for 3-4 minutes until charred and fragrant.
  4. Combine Ingredients: Slice rested chicken and add to the skillet with corn. Squeeze in lime juice and add cilantro, heating everything through.
  5. Assemble the Bowl: Spoon rice into bowls, layer with chicken and corn, and top with sliced avocado and extra lime juice.
  6. Serve Immediately: Enjoy with friends and family, it’s perfect for sharing!
