Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and fresh ginger.
  3. Add bite-sized pieces of boneless, skinless chicken breasts into the marinade and marinate for at least 15 minutes.
  4. Arrange chopped bell peppers and diced red onion in a single layer on a large sheet pan.
  5. Lay the marinated pieces of chicken atop the vibrant vegetables and drizzle any remaining marinade over everything.
  6. Bake in the preheated oven for 20 minutes, gently stirring halfway through.
  7. Sprinkle unsalted cashews over the chicken and veggies and return to the oven for an additional 10-15 minutes.
  8. Once fully cooked, let it rest and garnish with fresh cilantro before serving.
