  • 1 medium Red Onion Chopped finely.
  • 1 cup Grape Tomatoes Halved.
  • 1/2 cup Kalamata Olives Sliced.
For the Sauce
  • 1 cup Greek-Style Tzatziki Sauce Or substitute with yogurt mixed with cucumber and dill.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
For the Topping
  • 1 cup Feta Cheese Crumbled.
  • 1/4 cup Fresh Parsley Chopped for garnish.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Spread the uncooked white rice evenly across the bottom of the prepared baking dish.
  3. Pour the chicken broth evenly over the rice.
  4. Layer the cooked chicken pieces on top of the rice.
  5. Scatter the diced cucumber, chopped red onion, halved grape tomatoes, and sliced Kalamata olives over the chicken.
  6. In a mixing bowl, combine the Greek-style tzatziki sauce with garlic powder, dried oregano, salt, and pepper, and spread it over the casserole.
  7. Sprinkle crumbled feta cheese evenly over the tzatziki layer.
  8. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  9. After 45 minutes, remove the foil and bake for an additional 10 minutes to allow the feta to become golden.
  10. Let the casserole cool for a few minutes and garnish with freshly chopped parsley before serving.
