  • 8 oz Rotini Pasta spiral shape holds dressing and pickles
  • 1 cup Chopped Baby Dill Pickles adds crunch
  • 1 cup Colby Jack Cheese cubed for even distribution
  • 1/4 cup White Onion finely chopped, can substitute with red onion
For the Dressing
  • 1/3 cup Dill Pickle Juice adds tangy flavor
  • 1 cup Mayonnaise full-fat for best flavor
  • 1/2 cup Sour Cream for smoothness
  • 2 tbsp Fresh Dill for herbal note
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Combine the drained pasta with dill pickle juice in a large bowl. Let sit for 15 minutes.
  3. Chop the dill pickles, cube the Colby Jack cheese, and finely chop the white onion.
  4. Mix the pasta with the chopped dill pickles, Colby Jack cheese, and onion.
  5. In a separate bowl, mix mayonnaise, sour cream, additional dill pickle juice, fresh dill, salt, and pepper. Whisk until smooth.
  6. Pour the dressing over the pasta mixture and fold gently to coat.
  7. Cover and refrigerate for at least 2 hours before serving.
