Step-by-Step Instructions
  1. In a small bowl, whisk together 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of sugar, and a pinch of white pepper. Set aside.
  2. Heat a large nonstick skillet over medium-high heat and melt 2 tablespoons of butter. Pour in 2 beaten eggs and scramble until mostly cooked, then remove from the skillet.
  3. Add 2 cups of overnight jasmine rice to the skillet, breaking up any clumps. Stir-fry for about 3–4 minutes.
  4. Pour in the prepared soy sauce mixture while stirring constantly. Cook for another 2–3 minutes.
  5. Toss in 2 chopped green onions and adjust with salt if necessary. Cook for an additional minute, then serve.
