Preparation Steps
- In a medium bowl, combine the shrimp with olive oil, garlic powder, paprika, and salt. Toss to coat and marinate for at least 15 minutes.
- While the shrimp is marinating, prepare the mango salsa by chopping the mango, tomatoes, red onion, and cilantro. Mix with lime juice in a separate bowl and chill.
- Preheat a grill pan or outdoor grill to medium-high heat. Grill shrimp for 2–3 minutes on each side until pink and slightly charred.
- In a small bowl, mix Greek yogurt (or mayonnaise) with lime juice and chili sauce until creamy. Adjust spice level to taste.
- To assemble, layer cooked rice in bowls, top with grilled shrimp, slices of avocado, mango salsa, and drizzle with lime-chili sauce.
