Ingredients
  

For the Shrimp
  • 1 pound Large or jumbo shrimp For grilling
  • 2 tablespoons Olive oil For marinating
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • to taste Salt
For the Salsa
  • 1 large Avocado
  • 1 large Ripe mango Diced
  • 1 cup Tomatoes Chopped
  • 1/4 cup Red onion Diced, optional soak in water
  • 1/4 cup Cilantro Chopped
  • 1 tablespoon Lime juice For salsa
For the Lime-Chili Sauce
  • 1/2 cup Greek yogurt Or mayo
  • 1 tablespoon Chili sauce or Sriracha Adjust to taste
  • 1 tablespoon Lime juice Remaining
For the Base
  • 2 cups Cooked rice Jasmine, brown, or cauliflower rice

Method
 

Preparation Steps
  1. In a medium bowl, combine the shrimp with olive oil, garlic powder, paprika, and salt. Toss to coat and marinate for at least 15 minutes.
  2. While the shrimp is marinating, prepare the mango salsa by chopping the mango, tomatoes, red onion, and cilantro. Mix with lime juice in a separate bowl and chill.
  3. Preheat a grill pan or outdoor grill to medium-high heat. Grill shrimp for 2–3 minutes on each side until pink and slightly charred.
  4. In a small bowl, mix Greek yogurt (or mayonnaise) with lime juice and chili sauce until creamy. Adjust spice level to taste.
  5. To assemble, layer cooked rice in bowls, top with grilled shrimp, slices of avocado, mango salsa, and drizzle with lime-chili sauce.
