Ingredients

For the Batter
  • 1 cup Powdered Sugar Adds sweetness and a smooth texture; can use coconut sugar for a different sweetness.
  • 1 cup Instant Pistachio Pudding Mix Provides the unique pistachio flavor and vibrant green color; substitute with vanilla or chocolate pudding for variety.
  • 0.5 teaspoon Almond Extract Contributes a rich, nutty aroma; omit or replace with vanilla for nut-free options.
  • 6 cups Rice Chex Cereal Serves as the crunchy base; substitute with Corn Chex for a similar texture.
  • 2 cups White Chocolate Melting Wafers Ideal for coating with sweetness and a creamy texture; regular white chocolate chips can be used too, just melt thoroughly.
  • 2 tablespoons Butter Adds richness to the coating; margarine or coconut oil can be used for a dairy-free alternative.
For Final Touches
  • Optional Add-Ins Consider incorporating dried fruits, nuts, or seasonal M&Ms for an exciting flavor twist.

Equipment

  • Large mixing bowl
  • Gallon-size zip-top bag
  • microwave-safe bowl
  • Spatula

Method

Step-by-Step Instructions
  1. Start by placing 6 cups of Rice Chex cereal into a large mixing bowl, ensuring you have enough space to stir later.
  2. In a large gallon-size zip-top bag, combine 1 cup of powdered sugar with 1 cup of instant pistachio pudding mix. Seal the bag tightly and shake it vigorously until the dry ingredients are fully blended.
  3. Add ½ teaspoon of almond extract to the bag, seal it again, and give it another good shake.
  4. Grab a microwave-safe bowl and combine 2 cups of white chocolate melting wafers with 2 tablespoons of butter. Microwave in 30-second intervals, stirring after each session until fully melted and smooth.
  5. Pour the warm melted chocolate mixture over the Rice Chex cereal in the mixing bowl. Using a spatula or spoon, gently stir the cereal until every piece is evenly coated.
  6. Transfer the coated cereal into the prepared zip-top bag with the sugar mixture. Seal the bag tightly and shake it vigorously until all the cereal is coated.
  7. Spread the coated cereal evenly onto the lined work surface, allowing it to cool completely for about 15-20 minutes.
