- Start by placing 6 cups of Rice Chex cereal into a large mixing bowl, ensuring you have enough space to stir later.
- In a large gallon-size zip-top bag, combine 1 cup of powdered sugar with 1 cup of instant pistachio pudding mix. Seal the bag tightly and shake it vigorously until the dry ingredients are fully blended.
- Add ½ teaspoon of almond extract to the bag, seal it again, and give it another good shake.
- Grab a microwave-safe bowl and combine 2 cups of white chocolate melting wafers with 2 tablespoons of butter. Microwave in 30-second intervals, stirring after each session until fully melted and smooth.
- Pour the warm melted chocolate mixture over the Rice Chex cereal in the mixing bowl. Using a spatula or spoon, gently stir the cereal until every piece is evenly coated.
- Transfer the coated cereal into the prepared zip-top bag with the sugar mixture. Seal the bag tightly and shake it vigorously until all the cereal is coated.
- Spread the coated cereal evenly onto the lined work surface, allowing it to cool completely for about 15-20 minutes.
