Method
 

Instructions
  1. In a mixing bowl, combine 1 cup of cottage cheese and ⅓ cup of unsweetened cocoa powder. Use a hand mixer or a whisk to blend together until smooth.
  2. Add in 1 scoop of protein powder, your choice of sweetener, and 2 tablespoons of peanut butter. Optionally include 1 teaspoon of instant espresso powder. Mix thoroughly until well integrated and thick.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up.
  4. Scoop out tablespoon-sized portions and roll into balls using your hands. Aim for uniform sizes.
  5. Store in an airtight container in the fridge for up to 5 days, or freeze for 2-3 weeks. Thaw before consuming.
