- In a mixing bowl, combine 1 cup of cottage cheese and ⅓ cup of unsweetened cocoa powder. Use a hand mixer or a whisk to blend together until smooth.
- Add in 1 scoop of protein powder, your choice of sweetener, and 2 tablespoons of peanut butter. Optionally include 1 teaspoon of instant espresso powder. Mix thoroughly until well integrated and thick.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up.
- Scoop out tablespoon-sized portions and roll into balls using your hands. Aim for uniform sizes.
- Store in an airtight container in the fridge for up to 5 days, or freeze for 2-3 weeks. Thaw before consuming.
