  • 1 pound Ground Chicken can substitute with beef, turkey, or plant-based proteins
  • 2-3 tablespoons Taco Seasoning ensure it's sugar-free
For the Base
  • 4 cups Cauliflower Rice fresh or frozen
  • 2 cups Romaine Lettuce
For the Creamy Elements
  • 1 medium Avocado or substitute with Greek yogurt
  • 1/2 cup Full-Fat Sour Cream or replace with Greek yogurt
For the Freshness
  • 1 cup Cherry Tomatoes can use regular tomatoes if needed
  • 1/2 medium Red Onion or substitute with green onions
  • 1/4 cup Fresh Cilantro optional
For the Toppings
  • 1 cup Mexican Cheese Blend can use low-fat
  • 1/2 cup Sugar-Free Salsa
  • 1 tablespoon Fresh Lime Juice
  • 1 medium Jalapeño adjust quantity based on heat preference

Method
 

Cooking Instructions
  1. Heat a large skillet over medium-high heat. Add ground chicken and cook for about 5-6 minutes until browned.
  2. Drain excess fat, sprinkle taco seasoning over the chicken, and add 2-3 tablespoons of water. Stir for 2 minutes.
  3. Turn off heat and let chicken rest for 5 minutes.
  4. Prepare cauliflower rice: microwave frozen for 4-5 minutes, or sauté fresh in a pan for 3-4 minutes.
  5. Layer romaine lettuce in serving bowls, add cauliflower rice, followed by seasoned ground chicken.
  6. Top with sliced avocado, diced cherry tomatoes, red onion, Mexican cheese blend, and cilantro.
  7. Finish with a dollop of sour cream, spoonful of salsa, jalapeño, and lime juice.
