Ingredients
  

For the Chicken
  • 1 pound Chicken Breasts substitute with boneless chicken thighs for added juiciness
For the Cooking
  • 2 tablespoons Avocado Oil can replace with olive oil if needed
  • 1 tablespoon Fresh Ginger ground ginger can substitute, use 1/2 teaspoon
For the Sauce
  • 1/4 cup Coconut Aminos use low-sodium soy sauce if necessary
  • 2 tablespoons Honey maple syrup is a great alternative
  • 1 tablespoon Toasted Sesame Oil regular sesame oil won't have the same intensity
  • 1 tablespoon Rice Vinegar can be omitted, add more coconut aminos
  • to taste Black Pepper
  • to taste Lime Zest/Juice addoptional zesty kick
For Garnish
  • 2 tablespoons Sesame Seeds sprinkle for a nutty crunch
  • 1 cup Green Beans can use broccoli or mixed veggies
For Serving
  • 2 cups Cooked Rice or opt for quinoa or cauliflower rice

Method
 

Preparation
  1. Cut the chicken breasts into 1-inch cubes and set aside.
  2. Cook rice according to package directions and boil green beans for 3-4 minutes.
Cooking
  1. Heat avocado oil in a large skillet over medium-high heat.
  2. Sauté the cubed chicken for 10-12 minutes until cooked through.
  3. Whisk together coconut aminos, honey, sesame oil, ginger, and rice vinegar in a small bowl.
  4. Once chicken is cooked, pour the sauce into the skillet and cook for 3-5 minutes.
  5. Return the chicken to the pan and toss to coat with the sauce.
  6. Serve the chicken over rice and green beans, garnished with sesame seeds.
