Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice the top off the garlic head and drizzle it with olive oil. Wrap the garlic in foil and place it in the oven for 30 to 35 minutes until it's soft and caramelized.
  2. While the garlic roasts, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped spinach and sauté for about 2 to 3 minutes, stirring often until the leaves are wilted. Season with salt and pepper and set aside.
  3. In a mixing bowl, mash the roasted garlic cloves until smooth. Combine this with ricotta cheese, half of the shredded mozzarella, oregano, and a pinch of salt and pepper. Stir until well blended.
  4. Place the pizza crust on a baking sheet. Spread the garlic-ricotta mixture over the crust, layer sautéed spinach, and add remaining mozzarella and crumbled feta.
  5. Transfer the pizza to the oven and bake for 15 to 20 minutes until the crust is golden and cheese is bubbling.
  6. Remove the pizza from the oven and let cool for a few minutes. Garnish with fresh basil leaves. Slice and serve.
