Ingredients
  

For the Chicken Marinade
  • 1.5 pounds Boneless Skinless Chicken Thighs Substitute with chicken breast if preferred.
  • 1/4 cup Olive Oil Can be swapped with avocado oil.
  • 2 tablespoons Honey Dijon Mustard Regular Dijon mixed with honey can be used.
  • 4 cloves Minced Garlic Roasted garlic adds a milder flavor.
  • 1 tablespoon Lemon Zest Lime zest can be used as a substitute.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 tablespoon Dry Oregano Italian seasoning can serve as a substitute.
For Roasting
  • 1 cup Water or Stock Chicken stock deepens the taste.

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the boneless skinless chicken thighs with olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dried oregano. Mix thoroughly.
  3. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least one hour, preferably overnight.
  4. Thread the chicken thighs onto a Vertical Gyro Spit Plate or wooden skewers.
  5. If needed, create a makeshift spit by placing an onion at the base and inserting skewers through the chicken.
  6. Place the gyro in a roasting pan and pour water or stock into the base.
  7. Transfer the pan to the preheated oven and bake for 75-90 minutes, until fully cooked.
  8. Remove from the oven and let rest for about 10 minutes before slicing.
