- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the boneless skinless chicken thighs with olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dried oregano. Mix thoroughly.
- Cover the bowl with plastic wrap and let marinate in the refrigerator for at least one hour, preferably overnight.
- Thread the chicken thighs onto a Vertical Gyro Spit Plate or wooden skewers.
- If needed, create a makeshift spit by placing an onion at the base and inserting skewers through the chicken.
- Place the gyro in a roasting pan and pour water or stock into the base.
- Transfer the pan to the preheated oven and bake for 75-90 minutes, until fully cooked.
- Remove from the oven and let rest for about 10 minutes before slicing.
