Ingredients
  

For the Cookies
  • 1 cup sugar can substitute with brown sugar for a deeper flavor
  • 1 cup butter use vegan butter for a dairy-free option
  • 1 large egg or a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)
  • 1 teaspoon vanilla extract can swap for almond extract for a unique twist
  • 2 cups all-purpose flour or a gluten-free blend
  • 1 tablespoon cornstarch
For the Pastry Cream
  • 1 cup milk almond or oat milk can substitute
  • 1/2 cup sugar
  • 2 tablespoons cornstarch or arrowroot powder
For the Topping
  • 1/4 cup granulated sugar ensure it’s finely ground for optimal melting

Method
 

Prepare Sugar Cookies
  1. Cream together sugar and softened butter in a large mixing bowl until light and fluffy, about 3 minutes. Gradually beat in egg and vanilla extract.
  2. Slowly add in flour and cornstarch, stirring until the dough forms and is smooth.
Bake Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop tablespoonfuls of cookie dough onto the prepared sheet, spacing them about 2 inches apart.
  3. Bake for 10–12 minutes, or until the edges are lightly golden. Allow to cool on a wire rack for about 15 minutes.
Make Pastry Cream
  1. In a saucepan, combine milk and sugar, heating over medium heat until steaming.
  2. Whisk together cornstarch with a few tablespoons of warm milk. Gradually whisk this back into the saucepan, stirring constantly until thickened, about 2–3 minutes.
  3. Remove from heat, stir in vanilla extract, and allow to cool to room temperature.
Assemble Cookies
  1. Once cookies are cooled, spoon or pipe pastry cream into the center of each cookie, filling slightly over the sides.
Caramelize Sugar Topping
  1. Sprinkle granulated sugar over the pastry cream on each cookie. Using a kitchen torch, caramelize the sugar until golden and bubbly, about 30 seconds.
  2. If using a broiler, place cookies on a baking sheet and broil for 1–2 minutes, watching closely.
Cool and Serve
  1. Allow caramelized sugar to cool for a few minutes until crisp. Serve immediately or store in an airtight container.
