  • 1/2 cup Toasted Walnuts or Pecans Optional for nut-free
For the Vinaigrette
  • 2 tablespoons Citrus Juice (Lemon or Orange) Freshly squeezed
  • 1/4 cup Olive Oil
  • 1 tablespoon Honey or Maple Syrup

Method
 

Preparation Steps
  1. In a large mixing bowl, shred approximately four cups of green cabbage and add two cups of chopped kale. Follow with one cup of shredded carrots, half a cup of thinly sliced shallots, and one cup of fresh pomegranate arils. Toss together.
  2. In a separate small bowl, whisk together the juice of two lemons or oranges, a quarter cup of olive oil, and one tablespoon of honey or maple syrup until smooth.
  3. Just before serving, drizzle the vinaigrette over the slaw mixture and gently toss together.
  4. Serve immediately or store the slaw and dressing separately until ready to serve.
