Preparation Steps
- In a large mixing bowl, shred approximately four cups of green cabbage and add two cups of chopped kale. Follow with one cup of shredded carrots, half a cup of thinly sliced shallots, and one cup of fresh pomegranate arils. Toss together.
- In a separate small bowl, whisk together the juice of two lemons or oranges, a quarter cup of olive oil, and one tablespoon of honey or maple syrup until smooth.
- Just before serving, drizzle the vinaigrette over the slaw mixture and gently toss together.
- Serve immediately or store the slaw and dressing separately until ready to serve.
