Preparation Steps
  1. Gather all ingredients in a large mixing bowl.
  2. Combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onions in the bowl. Stir in soy sauce, rice vinegar, chili oil, and sesame oil. Set aside.
  3. Cut ends off cucumbers and spiral-cut them into thin, beautiful shapes.
  4. Sprinkle salt over spiral-cut cucumbers and gently massage for 2 minutes. Let sit for 8-10 minutes.
  5. Rinse cucumbers thoroughly under cold water to remove excess salt and drain well.
  6. Toss rinsed cucumber spirals in the dressing until evenly coated and let marinate for about 15 minutes.
