- Slice day-old sourdough bread into thick slices.
- Chop dill pickles into small pieces and slice dill havarti cheese into 1/4-inch slabs.
- Layer half of the sliced cheese on one slice of bread, add chopped pickles, and cover with remaining cheese.
- Butter the outer sides of both slices of bread with approximately 1 tablespoon each.
- Preheat a skillet over medium-low heat and place the sandwich in it, cooking for 4-5 minutes until golden brown.
- Flip the sandwich, pressing down gently, and cook for an additional 3-4 minutes until cheese is melted.
- Remove from skillet, add dill pickle-flavored potato chips, slice diagonally, and serve immediately.
