Ingredients

For the Filling
  • 1 cup Cooked Shrimp Use fresh for best flavor; frozen should be fully thawed and drained.
  • 1 cup Cooked Crab Meat Fresh meat is ideal; canned works but quality is key.
  • 1 cup Monterey Jack Cheese Offers creaminess; swap with pepper jack if you enjoy spice.
  • 4 oz Cream Cheese Adds a rich texture; consider plant-based cream cheese for a vegan option.
  • 1 cup Queso Dip Choose mild for classic flavor or spicy for an exciting twist.
  • 1/4 cup Fresh Cilantro Brings a fresh taste; parsley can be used for a different flavor.
  • 1 tsp Garlic Powder Adds savory depth; fresh minced garlic can elevate flavor.
  • 1 tsp Smoked Paprika Introduces a delightful smoky note; use sweet paprika if preferred.
For the Taquitos
  • 8 small Flour Tortillas The perfect vessel for your filling; opt for gluten-free tortillas if needed.
  • 1/4 cup Butter or Oil Essential for frying, helping achieve that desired crispy finish.

Equipment

  • Mixing bowl
  • Skillet
  • Spatula
  • tongs

Method

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine the cooked shrimp, crab meat, Monterey Jack cheese, softened cream cheese, queso dip, chopped cilantro, garlic powder, and smoked paprika. Use a spatula to fold the ingredients together until thoroughly mixed.
  2. Lay out your flour tortillas. Scoop 2-3 tablespoons of the seafood filling onto one side of each tortilla. Roll the tortillas tightly around the filling, securing the mixture inside.
  3. In a skillet, heat the butter or oil over medium heat until shimmering. Add the taquitos seam-side down in a single layer.
  4. Fry the taquitos for about 3-4 minutes on each side, or until golden brown, flipping halfway through.
  5. Once golden brown, remove the taquitos and place them on a paper towel-lined plate to drain excess oil.
  6. Remove the toothpicks just before serving. Drizzle with warm queso dip and garnish with fresh cilantro.
