- In a large bowl, combine the shredded chicken, cheese, salsa verde, ground cumin, garlic powder, onion powder, and season with salt and pepper. Mix until well combined.
- Stack the corn tortillas, wrap in a damp paper towel, and microwave on high for about 30 seconds until warm.
- Spoon about 2 tablespoons of the chicken mixture onto the lower third of each warm tortilla. Roll the tortilla tightly around the filling.
- In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully place the taquitos seam-side down into the skillet. Fry them for 2-3 minutes on each side until golden brown.
- Transfer fried taquitos to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite toppings.
