Filling Preparation
- In a large mixing bowl, combine the cooked shredded chicken, shredded cheddar cheese, cream cheese, and sour cream. Mix until well blended and creamy.
- Sprinkle in the garlic powder, onion powder, cumin, chili powder, salt, and pepper. Stir well to combine.
- Lay a tortilla flat and spoon 2-3 tablespoons of the chicken filling onto the lower third of the tortilla.
- Roll the tortilla tightly around the filling, tucking in the sides. Place seam-side down on a tray.
- In a skillet, heat about one inch of vegetable oil over medium-high heat.
- Carefully place the taquitos seam-side down in the hot oil and fry for 2-3 minutes until golden brown.
- Remove from the skillet and drain on paper towels.
- Serve warm with optional toppings.
