  • 1 cup Heavy Cream Full-fat coconut milk for dairy-free
  • ½ cup Parmesan Cheese Nutritional yeast for vegan option
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Dried Basil
For Serving
  • 2 cups Cooked White Rice Jasmine or basmati preferred
  • ¼ cup Fresh Parsley Chopped, for garnish

Method
 

Preparation and Cooking
  1. Cut chicken into bite-sized pieces, season with salt and pepper, and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6-7 minutes until golden brown.
  3. Remove chicken from skillet and set aside. In the same skillet, melt butter and add garlic, sautéing until fragrant.
  4. Pour in chicken broth, bring to a simmer, then add heavy cream, Italian seasoning, and dried basil. Simmer for 3-4 minutes.
  5. Stir in Parmesan cheese and mix until melted and creamy. Adjust seasoning if necessary.
  6. Return chicken to skillet, coating in sauce. Simmer for 5 minutes.
  7. Serve the chicken mixture over rice, garnished with parsley.
