- Cut chicken into bite-sized pieces, season with salt and pepper, and set aside.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 6-7 minutes until golden brown.
- Remove chicken from skillet and set aside. In the same skillet, melt butter and add garlic, sautéing until fragrant.
- Pour in chicken broth, bring to a simmer, then add heavy cream, Italian seasoning, and dried basil. Simmer for 3-4 minutes.
- Stir in Parmesan cheese and mix until melted and creamy. Adjust seasoning if necessary.
- Return chicken to skillet, coating in sauce. Simmer for 5 minutes.
- Serve the chicken mixture over rice, garnished with parsley.
