For the Vegetables
  • 8 ounces Sliced Mushrooms shiitake or cremini are good alternatives
  • 1 cup Asparagus or substitute with broccoli/spinach
For the Sauce
  • 2 tablespoons Olive Oil or butter for richer flavor
  • 1 cup Heavy Cream or half-and-half/plant-based cream
  • 1/2 cup Grated Parmesan Cheese nutritional yeast for vegan option
For Seasoning
  • 1 teaspoon Garlic Powder fresh garlic can be used
  • 1 teaspoon Onion Powder or fresh onions
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente, then drain.
  2. In a skillet, heat olive oil over medium heat. Add chicken, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until golden brown.
  3. Add mushrooms and asparagus to the skillet; sauté for 3-4 minutes.
  4. Pour in heavy cream, stir, and simmer for 2-3 minutes.
  5. Stir in grated Parmesan until melted, adding pasta water if too thick.
  6. Combine drained pasta with the sauce, toss to coat, and cook for 1 more minute.
  7. Serve warm, garnished with extra Parmesan if desired.
