Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and roast for 45-55 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until translucent.
  3. Add frozen mixed vegetables and cook for an additional 5 minutes until tender.
  4. Stir in the cooked chicken, chicken broth, garlic powder, thyme, salt, and pepper. Simmer for 5-7 minutes.
  5. Remove from heat and fold in blended cottage cheese until creamy.
  6. Slice the roasted sweet potatoes in half and fluff the insides. Stuff with the chicken mixture.
  7. Serve warm, garnished with fresh thyme or herbs of your choice.
